One main driver for tooth decay, is there there is a bacteria (S. mutans) that converts sugars (sucralose) into acids (lactic acid), and this disolves your teeth and makes them decay.

It is possible, however, to get bacteria that instead convert sugar into alcohols instead. This is slightly less metabolically favourable, so they modify the bacteria to produce an antibiotic, to be resistant to that antibiotic, and to not spread with other bacteria the code for resistance to that antibiotic. If you suffer from asian flush (ALDH2 deficiency), the risk is even more that you should probably not get it (again, risk is another 5-10x higher). It is not exclusive to asians, so you should test for the gene even if not before considering getting the bacteria.
